Ownership & history:

Château Vari was purchase by Yann Jestin in 1994. He produces red and dry whites under the Bergerac appellation and sweet white Monbazillac.

Vineyard & location:

The vineyard is located in the beautiful Dordogne region, near the town of Bergerac at the eastern end of the Bordeaux vineyard.

Harvest, vinification & ageing:

The noble rot means that the grapes have to be picked by hand, and the picking crew go through the vines three times to ensure that only the rotten, sugar-rich grapes are selected. The pressing is slow, due to the highly concentrated, thick nature of the juice. After sedimentation to remove the lees, the must ferments slowly. To get the correct balance between alcohol content and non-fermented sugar, it is often necessary to stop the alcoholic fermentation before its natural completion. The wine then ages for twelve months in oak casks.

Shiny gold. The Sémillon grape gives aromas of pear, grapefruit and the ageing in oak brings vanilla and nut aromas. The mouth is beautifully rich with a harmonious balance of sweetness and acidity. Long fruity aftertaste.

Vintage :

90% Sémillon
